Brie with Apple, Cranberries & Almonds

They boys were off camping with the boy scouts this weekend, which left just us girls at home.  It always seems much easier cooking and planning for 3 than 5...  Friday night I just made this great appetizer for dinner and the girls loved it.  I hadn't made it in years and I really don't know why, it comes together very easily.

Ingredients:

1 cup chopped apples
1/2 cup sliced almonds
1/2 cup dried cranberries
2 Tbls packed brown sugar
2 Tbls melted butter
1 round 16-17oz. Brie Cheese

Instructions
Preheat oven to 350 degrees. Peel and coarsely chop apple. Combine apple, almonds, cranberries, brown sugar, and butter in a small bowl. Mix together.

Cut brie in half horizontally. Place one half – rind side down into baking dish. Spoon half of apple mixture onto bottom half of Brie – spreading evenly. Top with remaining half of Brie, rind side up. Spoon remaining apple mixture over top.

Bake 12-15 minutes or until cheese is soft and just begins to melt.

Serve with thinly sliced French bread.
